The Meat & Wine Co Bligh Street
We are pleased to have again worked with The Meat & Wine Co to secure a primary service authorisation (PSA) for their Bligh Street restaurant. BSV had initially helped obtain an interim restaurant authorisation (IRA) while awaiting the approval of an on-premises (restaurant) licence, before that too was granted with our licensing team’s assistance.

Fat Thaiger, Haymarket
Liquor licensing and planning matters are frequently co-dependent, and it is important for both aspects to be in line with each other to ensure compliance. We are pleased to have assisted Cabuk Pty Ltd in their successful section 4.55(2) Development Application for Fat Thaiger at Haymarket, to extend their trial period for extended trading hours associated with their small bar licence.
BWS Gables
BSV are pleased to have assisted the Endeavour Group in the successful removal of one of their existing packaged liquor licences to a new development site inside a proposed neighbourhood shopping centre in Gables. Removal applications occur when the applicant ceases to trade in one location but wishes to utalise its liquor licence in another location.
Morena Restaurant - Sydney
We are pleased to have assisted the team at Morena Restaurant Sydney, with the requisite approvals to open their new restaurant in Martin Place. BSV’s licensing team have secured an on-premises (restaurant and caterers service) licence endorsed with a primary service authorisation (PSA) for the budding venue, which is an increasingly common licence solution sought by many dining venues for its substantial and broad permissions.
Industry Alert - Update to Guideline 16
Earlier this year, the NSW Independent Liquor and Gaming Authority (the Authority) updated Guideline 16, which governs the way in which it assesses applications that increase access to post-midnight gaming. The Guideline formerly applied to any application that, if approved, would result in increased availability of gaming machines after 12 midnight at a venue located in a Band 3 SA2, or after 2am at any venue. Now, it applies to any application that, if approved, would result in increased availability of EGMs after 12 midnight at any venue.

Meat & Wine Co, Bligh Street Sydney
BSV again acted for its long standing client under the hospitality umbrella of the Seagrass Group .Following the earlier approval of their interim restaurant authorisation (IRA), the Meat & Wine Co’s new restaurant in Bligh Street, Sydney obtained approval of an on-premises (restaurant) licence. This now makes permanent the capabilities given under the IRA and permits the restaurant to the sell and supply liquor ancillary to the provision of a genuine meal.
Boomm - Turramurra
The BSV team are pleased to have assisted Boomm with the successful grant of a limited packaged liquor licence to operate their online delivery service in NSW. The approval creates an exciting new opportunity for Boom to expand its service from Tasmania and Victoria to NSW. The licence is limited by means of taking orders via the Internet, phone, mail or other electronic means and allows same-day deliveries of liquor in sealed containers.
BWS - Beer Wine Spirits Forbes
We are pleased to have continued our strong relationship with our clients at Endeavour Group Limited in delivering the successful approval of a new BWS branded bottleshop at Forbes. The new site on Camp Street will include an associated drive-up/drive-through facility in line with contemporary customer expectations of regional bottle shops, and will be conveniently located in the heart of town just across the picturesque Lachlan River. In addition to providing a wide selection of competitively priced liquor products, BWS Forbes will ensure 7 new jobs for the local community and create another element of choice and convenience for customers around Forbes.
Asiana Liquor, Chatswood
BSV are pleased with the outcome of the packaged liquor licence (PLL) application for our clients at Asiana Liquor, Chatswood. Beginning the process in late August 2023, the licensing team at BSV were able to prepare a complex Category B Community Impact Statement (CIS), lodge the application and receive approval alongside written statement of reasons from the Independent Liquor and Gaming Authority (ILGA) all within 6 months.
BWS – Beer Wine Spirits Marrickville
Chuck & Son’s Brewing Co, St Peters
We are delighted to have worked with Chuck & Son’s Brewing Co to deliver approval of their producer/wholesaler licence application endorsed with a drink on-premises authorisation. The emergent brewer will deliver an exceptional craft brewery offering to individual and commercial customers. With a planned launch for mid-2024 the business’ tap-room site at St Peters will offer a unique and premium offering that caters to both lovers and experts of craft beer and is designed to host live bands, events, tours and tastings to create an immersive retail experience right in the heart of their brewery set-up.
Commbank Stadium & Accor Stadium, Change of Conditions
BSV are very pleased to have assisted VenuesLive NSW with their successful change of conditions applications for their on-premises licences for Commbank Stadium and Accor Stadium. In this case, both Stadiums had conditions that applied for a 12-month trial period, and at the end of that period they sought the ease of restrictions to be made permanent.
Hurricane’s Grill, Castle Hill
BSV again congratulates Hurricane’s Grill, Castle Hill, on the recent approval of their primary service authorisation (PSA) to be endorsed on the existing on-premises (restaurant) licence for their Castle Hill restaurant. BSV’s licensing team had previously ensured the approval of the on-premises (restaurant) licence last year, and was able to promptly arrange the PSA’s approval by NSW Liquor & Gaming in time for the business to make the most of its new liquor licensing capabilities early in the new year.

BSV’s licensing team are pleased to have acted for Daiwa Food Corporation (Syd) Pty Ltd on their successful application for a producer/wholesaler (wholesale only) licence at their Alexandria warehouse. This licensing option has increased in popularity. It allows flexible wholesale trade, such as liquor sales via e-commerce, and is suitable for businesses operating out of office suites, warehouse venues or even home businesses.
